Y do some or many Chinese restaurants NOT devein the shrimp?

Hello if you don’t devein it you’re eating poop!
I notice @ some Chinese restaurants (in TX where I live) the kung pao shrimp is NOT deveined but their jumbo garlic shrimp is. WTF? Anyone know why?
I buy my shrimp peeled AND deveined & sometimes precooked!
Has anyone ever found a recipe like the ones you find in Chinese restaurants?

I adore Chinese, especially the local take-out place. Their food is out of this world.
